Three Bean Salad

For the Salad:

1/2 Onion, finely diced

1 Tin Pinto beans, drained and rinsed

1 Tin Chickpeas, drained and rinsed

1 Tin Black beans, drained and rinsed

1 Finely chopped cucumber

60g Fresh Parsley

3/4 tsp Dried Oregano

For the Dressing:

250g      All purpose flour

50ml Rayner’s Red Wine Vinegar

60ml Extra Virgin Olive Oil

1tsp Dijon Mustard

3/4tsp Salt

1/4tsp Ground Black Pepper

Method:

1.       Once your onion is chopped, place in a small pot of water for 5 minutes to let it soften.

2.       Meanwhile, take the dressing ingredients and whisk together in a large bowl.

3.       Drain the onion and add it to the dressing, along with the cucumber, parsley, oregano, and beans. Toss well to evenly cover with the dressing.

4.       Cover and chill in the fridge for at least an hour, allowing the beans to marinate in the dressing.

5.       Serve and enjoy!
