Malt Bagels

Makes three 450g loaves

2             Bananas, peeled and mashed

225g      Raisins

675g      Self raising flour

200g      Soft dark sugar

60g         Drinking chocolate

60g         Rayner’s Molasses

570ml   Milk

60g         Rayner’s Malt Extract

200g      Butter

2g           Salt

Method:

1.       Grease and line 3 x 1lb loaf tins.

2.       Pre-heat oven to 160oC / 325 oF / gas mark 3.

3.       Put the milk, butter, raisins, sugar, drinking chocolate, treacle and malt extract into a large saucepan.

4.       Heat slowly until the butter has melted, then allow to cool.

5.       Mix in remaining ingredients.

6.       Split mixture into three 450g loaf tins.

7.       Bake in the centre of the oven for 75 minutes.

8.       Cool in the tins for five minutes before turning on to a wire rack to finish cooling.
