Protein-Packed Lemon Mousse (vg)

300g Silken Tofu

100ml PLj Lemon

7 tbsp Icing Sugar

1 Pinch of Salt

1 Pinch of Turmeric (for colouring)

 

Method:

  1. Blend the tofu in a food processor until smooth.

  2. Add PLj Lemon, Icing Sugar, Salt and Turmeric and blend until well mixed.

  3. Spoon the mixture into 4 glasses and chill for 4 hours or overnight.

  4. Decorate with lemon zest before serving, share and enjoy!
