Method
Heat the oven to Fan 170C and line two baking trays with parchment paper.
In a large bowl, beat the butter until it has softened.
Slowly add the flour while whisking.
Once the flour and butter are combined, gradually introduce the cornflour and icing sugar.
After all dry ingredients are mixed, add your PLj Lemon, PLJ Lime, lemon zest, lime zest and salt, stirring until the mixture forms a ball of dough. If it feels a bit too wet, carefully add some more flour.
Roll the dough out on a lightly floured surface until roughly 5mm thick. Cut out your desired shapes and place on the pre-prepared baking trays.
Bake for 20-25 minutes, until the edges start to show a bit of colour, then remove from the oven. Leave to cool on the baking trays for 5-10 minutes before transferring to a wire cooling rack.
