Method
2 x Baking trays lined with baking Parchment
Heat the oven to 200c/ 180 fan/ gas mark 6
Place the butter, sugar, egg, vanilla and lemon in a bowl, and mix on LOW for 5 mins until combined. Scrape the sides of the bowl, add the plain flour and mix on LOW until in has all come together as a smooth dough.
Divide the dough in half roll out on a floured surface to around 5mm in thickness, and stamp out 5-6cm round. Keep and re-roll the trimmings, roll out the other half and stamp out. You should get about 40 cookies, arrange the cookies on the tray and cover with cling film and chill for 30 minutes.
Bake in the oven for 12 -15mins or until the cookies are a pale golden colour. Cool of a wire rack. Once cool you can ice them, dunk in plain chocolate or eat as they are.
To make the icing
Add to a small mixing bowl and mix until smooth and combined. Spoon and small blob onto each biscuit and allow to flow out, (you can always top with some sort of decoration).
