Sweet, Sticky, Spicy Aubergine

1 Aubergine, diced

100 ml Rayner’s Coconut Aminos

2 tbsp Maple Syrup

1/2 inch Ginger, grated

5 Garlic Cloves, minced

2 tsp Chilli Flakes

Method:

1.       Mix the Coconut Aminos, garlic and ginger in a large bowl.

2.       Add the diced aubergine, stirring to make sure it is evenly covered in the sauce. Leave to marinate for 30 minutes.

3.       Heat a frying pan over medium heat, adding the marinated aubergine to cook for 10-15 minutes. Stir regularly to cook all sides.

4.       Serve with freshly cooked rice.
